We now "super dry"our main flours to enable longer shelf life, though we have had to alter the water levels in our recipes to compensate for this. This process has also added to the cost but our customers tell us it is worthwhile. The quality control of the blending process is absolutely crucial to the success of our products. Therefore we use a specialist blender to blend and pack our mixes. They only blend and pack 100% gluten free ingredients at their facilities - thus preventing any possible contamination of our products with gluten. Our products are high in fibre (a non-retentive starch gained from a specially bred maize variety) thus helping to compensate coeliacs for the lack of fibre usually contained in wheat based products. Our mixes are low in fat (less than 1%), and we have reduced the sodium content as far as possible by increasing the potassium level without affecting taste and moisture retention.
